Dr Rosita Jamaluddin received her PhD in Nutrition from Universiti Kebangsaan Malaysia (2007). Her earlier education was from Washington State University in Home Economics in the ....... areas of Dietetics and Foodservice Management. She is an Associate Professor at the Department of Nutrition and Dietetics, at one of the top universities in Malaysia, Universiti Putra Malaysia, with 30 years of experience in teaching. She has published more than 40 papers in reputed journals. She is very passionate on research pertaining to factors affecting the dietary intake of the populations, namely research on the influence of foodscapes on food intake. She has also conducted research looking into the perception of hospitalised patients on the foodservices. Food safety is one of the pertinent areas related to foodservices and that gave her the awareness to conduct research on the safety of food in relation to its aflatoxin content. Due to this, several researches were conducted determining the aflatoxin levels in dairy products and the intervention of probiotics, specifically Lactobacillus casei shirota strain, to reduce aflatoxin contamination in subjects, determined through the biological samples.
